Thanksgiving Catch Up

The last couple days have been packed with Thanksgiving goodness.  We had two Thanksgivings this year – Thursday at my parents’ house and Friday at Mat’s parents’ house.

We started both Thanksgivings with a breakfast of pumpkin bread with pumpkin cream cheese and scrambled eggs.  And coffee – half pumpkin spice coffee and half regular.

That was Mat’s plate, not mine.  Mine was a bit smaller and didn’t have a roll.  🙂

Mat put the kitty around his neck like a scarf when we got back from our Thanksgiving #1 walk.


She hung out for a while – I was surprised.  Isn’t she cute??  🙂

When we were at Mat’s parents’ last night we were talking about Christmas and how we were trying to find a non-creepy angel tree topper.  Then today, right after my run, I got a text from Kathy that she saw this at Walmart.  She offered to get it for us.  Awesome!  One less thing to figure out!  Only stockings (and all the gift shopping of course) is left.


When I got back from my 10 mile run today, I scooped up Oakley and snapped a picture.  I’m not sure she appreciated my sweatiness.  🙂


Tonight we’re taking a break from Thanksgiving food and making salmon with Brussels sprouts and hopefully biscuits, if I find a recipe I like using ingredients I have.  I usually prefer buttermilk ones, but I don’t have any buttermilk at the moment.

It’s a quiet night around here for us.  I can’t remember the last time I was home on a Saturday afternoon.  Besides making salmon, the plan is to watch a Christmas movie and just relax.  Yay!

Another Lazy Dinner

Last night was Boca Burgers.  Tonight, since I was at a pep assembly practice until 8, it was salmon patties.  Mat had been working on a paper all day and wasn’t making much headway so he was pretty frustrated (he has mild dyslexia that at times likes to act up.  Today it decided to act up at a really bad time).

So, we kept it easy.

It was GOOD!  I froze a bunch of them so they’ll be fresh by Friday.  I’m SO glad I made them today so I don’t have to worry about them later this week.  I have NO time for things like baking the next few days (*sad face*).

Blogging Opportunities

Have I ever mentioned how much I’m LOVING the blog world? Well, I’m LOVING the blog world. And the best part? I’m also having a lot more fun at work this year than last year. So despite being tired, and despite having a terrible morning, things are good.

One of the opportunities I have coming up is the chance to work with SlimKicker. Slimkicker is a free site that helps people achieve their fitness goals in a fun way by turning fitness goals into a level up game. I’m super excited to work with them! I’m also looking into publishing opportunities with BlogHer as well as moving toward a self-hosted site and redesigning my site. I stumbled on another blogger the other day who also does designing for not a lot of money. I figure it would be a great way to give my blog a fresh new look without spending a fortune. And, I know that hosting isn’t too terribly expensive per month either. I think it would be a great opportunity for my blog and for me since, you know, I’m LOVING the blog world. 🙂

Since I went to ballet tonight, Mat made dinner. Actually, I think he’s made dinner most night’s this week. We kept it simple with salmon patties, salad, and the leftover quinoa from Tuesday’s stir fry.


I realized today that I haven’t posted breakfast, lunch, or snacks in forever. Here’s an update: I always have cottage cheese, granola, and strawberries for breakfast along with coffee. I always have half a pb&j with an apple or banana for lunch.

It’s super exciting.

It’s time for bed. It’s been a long week, and an even longer day. Thank goodness tomorrow is Friday!

P.S. I’ve consumed these today, times several. It was one of those days.

The Second Day

Oh my goodness, what a day!  But it was a good day.  My Algebra 2 classes were all well-behaved, and I’m hoping they stay that way all year.  We were reviewing order of operations, which I think they all found super easy.  Which is good.  Because they should.  Because if they’re in Algebra 2 and can’t use order of operations correctly, we have a problem.

Dance production today was FABULOUS.  The girls are so excited to “learn the basics.”  I gave them a few SUPER.  EASY.  ballet things to do, and they just ate it up.  They were so happy that they finally have a structured dance class.  Now, my job is to learn some more jazz and hip hop for them.


Tonight’s dinner is a salmon barbecue salad.  Mat made a couple of salmon patties and we chopped them up and tossed them with romaine lettuce, spinach, cucumber, bell peppers, broccoli, carrots, tomato, black beans, corn, shredded cheese, ranch, and barbecue sauce.


De. Lish. Us.  Yes, that was spelled oddly.

We also finished the leftover cake we gorged on last night:


Poor Mat has hardly slept at all the last two nights and might be getting sick.  He needs to get to bed early, and I never complain about extra sleep.  Good night!

Food, Ballet, More Food, and Cereal

I’m guessing the title of this post sounds odd.  In all honesty, I can’t think of anything more creative tonight.  🙂

The first food was lunch.  I had basically the same thing as yesterday, only instead of a banana I sliced up an apple, and instead of semi-sweet chocolate chips like I usually use I used bittersweet ones.  The reason for this?  I was in the process of making quinoa balls (recipe to come) to take to Vegas next week and needed chocolate chips for them.  We’re almost out of semi-sweet and I needed a full cup, and I found the bittersweet ones in the cupboard from forever ago.  I’ve been intending to use them for ganache on a cake, but clearly that isn’t happening anytime soon.

I then went to ballet and didn’t get my butt kicked quite as hard.  This is either because it was my third class back or because they had actually turned the air on.  Or both.  Either way it wasn’t quite as bad.  I’ve also been much better for the last week at stretching and working on getting my extension back, so I’m hoping I see results from that soon.


Tonight we finished off the last of the pesto pasta but added a couple of salmon patties to it since we had already eaten all the shrimp out.  This was a perfect way to make sure there was protein in the meal while finishing off leftovers.


Since we’re leaving on Sunday for one last summer vacation in Vegas, we’re trying to eat up the leftovers or things that will spoil.

In other news, I just received samples of three different types of cereal from Attune Foods.  I’m planning to review them on the blog after our Vegas vacation, so stay tuned!


And last but definitely not least, Mat and just each bought a month’s worth of unlimited CrossFit classes through LivingSocial/Amazon.  A friend of mine from college and fellow teacher shared it with me via Facebook this morning because I’d been talking about trying it.  We’ll probably wait until after the Long Beach Half Marathon on October 7th to use it, but I’m excited!  Scared, but excited.  🙂  Once we start going, I will definitely be posting about it.  🙂

Memorial Day Meal Part 2

Part 2 of the meal that started with guacamole was maple brown sugar salmon and grilled vegetable salad.  Sadly, we forgot to take pictures of the vegetable salad before we ate it.  But there are leftovers so hopefully we’ll remember tomorrow.  🙂

The meal was paired with a glass each of chardonnay.  Yum!

Maple Brown Sugar Salmon

~1 tbsp maple syrup

dash chili powder

dash garlic powder

salmon filet


  1. Mix all ingredients (except salmon of course) in a small bowl.  Pour over salmon filet.
  2. Grill salmon on an outdoor grill or grill pan (which is what we did) until done.
  3. Yes, it’s that easy.

Grilled Vegetable Salad (adapted from myrecipes.com)

Vinaigrette Ingredients:

1/4 cup red wine vinegar

2 tbsp olive oil

3 tsp honey

1 tsp dijon mustard

salt and pepper

Other Ingredients:

a mix of grill-able vegetables – we used eggplant, zucchini, yellow squash, and a few bell pepper pieces we had in the fridge)

basil and oregano


  1. Slice eggplant into ~1/2 inch slices and sprinkle both sides with salt.  Let sit for about 15 minutes and then dab off the extra salt.  This prevents the eggplant from becoming too mushy when cooked.
  2. While the eggplant is being salted, mix all vinaigrette ingredients except vegetables in a bowl and set aside.
  3. Slice the remaining vegetables into chunks suitable for grilling – we like to cut them in half lengthwise and then into 4 inch pieces.
  4. Grill all vegetables on an outdoor grill or grill pan (which is what we did) until they have nice grill marks and are soft but not mushy.
  5. Allow to cool for a few minutes, then cut them into small pieces.
  6. Put vegetables in the bowl with the vinaigrette and toss to coat.  Add basil and oregano to taste, and more salt and pepper if necessary

So far it has been a pretty nice weekend.  And the best part is, there’s one more day!  And I’m  starting it with a 5 mile run.  🙂
