In Other News

TWO of my friends had baby boys today!  Welcome to the world Rhys Everett McBride and Jackson Ryan Gunderson!  You both have wonderful parents and are going to be loved so, so much!  I’m so excited for everyone who is having babies right now, and am just as excited for us to have babies of our own (one day).  🙂  It doesn’t seem like we’re old enough to be married and having kids, yet here we are.  It’s an amazingly scary but wonderful thing.


I went at the carbs tonight.  I mean, doesn’t 22 miles mean you’re allowed to?

I went with my usual: the You Pick Two combo.  Tonight I had a half caesar salad and a cup of black bean soup.  And naturally I had it in a bread bowl.  Only way to to if you ask me.  And yes, the combo came with a chunk of baguette on the side.  But I ended up giving it to Mat because he was still hungry after his panini.

After a quick stop at Target (we’re such party animals) we settled in at home to watch The Hurt Locker and eat this.

Friday Night Pizza


Friday nights in this house tend to be pizza nights. Tonight was no exception.

I’m not sure how easy it is to tell, but it’s a pretty good-sized piece of pizza!  Costco is the best.

Oh and we had a small salad too.  We’ve been bored with salad, but we haven’t had it in a while so it was nice to have today.

We had a really nice red wine also.  It was a blend and very mellow.  I’m not usually a big red wine fan, so I was happy to really enjoy this one.


And this is my husband’s plate.  He had a 4th piece.  Boys.

Oh, I also ate his crust.  I always eat his crust.  Shhh…


Today was a rest day (minus abs/push-ups and giving the girls a ballet type class today).  I’m running a 22 miler tomorrow so rest is my bff.  I’m meeting my daddy at the beach at 7:30 for it.  It’s my LAST long run before taper!  WOOHOO!!!!

Christmas Movie Night

Today for our day of togetherness we picked watch a Christmas movie.  We chose Home Alone 2.  We watched Home Alone a few weeks ago and have been meaning to watch the second one.  We were also thinking of watching The Holiday, but it’s a longer one and since it’s a weeknight and Mat has to be at work at 5 am, we figured the shorter movie was better.

While we watched, we had honey chicken from the crock pot.  It was a sauce made with melted butter, honey, mustard, and curry poured on the chicken breasts in the crock pot and then cooked on low for 5-6 hours.  It came out really good!  I’m glad we decided to start eating chicken again.  I love vegetarian meals, but chicken has more protein and provides a lot more meal variety.  We had it with a salad and the last of the whole wheat bread we had frozen (not pictured).



I’m loving the Kraft sundried tomato dressing – it’s what we used tonight.  In theory I want to make my own salad dressings, but time doesn’t allow it.

I haven’t done an update on work or running in a while.  There’s not much to tell.  We have 4 days left until winter break, and I couldn’t be more ready.  In the meantime, I’m keeping up with my marathon training and doing pretty well.  Saturday’s 14 miler was a bit rough, but I made it through.  Hopefully this weekend’s 11 miler will rest my muscles enough that the 16 miler the week after that won’t kill me.  16 is my current max from February, and when I did it then I felt terrible by the end.  Makes me nervous.  :-/

I need lucrative ideas for side money.  Anyone know of anything?

Our First Christmas Card!

Today’s day of togetherness was to address the Christmas cards.  This is the one we sort of cheated on and chose is specifically on a day where we had time to address the cards and make sure they get out in time.  We’ve actually had the cards for a week, but for some reason Costco didn’t give us envelopes with them so we didn’t have those until yesterday when I went back and asked for them.

I was proud of myself.  I got home from work, folded some laundry, and sat right down to start writing addresses.  I got through all 80 or so cards in one sitting.  Go me!

Mat is almost done stuffing/sealing and then it’s just the stamps and return address labels.  I don’t think we’re going to finish tonight – I need some TV in my life.  We’ve been PLOWING through The Big Bang Theory on DVD.  Seriously the most hilarious show ever.  We both hope Mat gets season 5 for Christmas because we’ll definitely be more than done with the first 4 before Christmas gets here!

Dinner was crock pot black bean enchiladas with boca burgers.  It’s basically a filling of corn, black beans, onion, and some spices including smoked paprika and then rolled and layered in the crock pot with salsa and cheese.  I plan crock pot meals for Mondays because Mat is off work and can prep it, and that’s what happened today.  He added boca burgers to it for added oomph.


We topped the enchiladas with Greek yogurt, more salsa, and hot sauce.

Last night’s dinner was Bisquick chicken pot pie and salad.  It’s something my mom used to make and is super easy.

I need to do a full review of my marathon training so far.  The plan is to organize my life during Christmas break.  It’s been a rough several weeks and I’m definitely in need of a breather!

It’s Sad When 6 Uninterrupted Hours of Sleep is a Good Thing

Last night I slept for approximately 6 hours.  That’s the first time that’s happened in several days.  The last time I slept straight through the night was the night before Thanksgiving.  It’s been a rough few weeks.

Because of the rough few weeks, I haven’t been blogging as much as I normally would.  I’m not giving up on it by any means, but the big plans I’ve had for it are going to have to wait.  I need to get myself back on track and healthy again.

Last night for dinner we made chicken in the crock pot.  We decided to start adding chicken back into our diet, at least a little bit.  We threw the chicken in with leftover pizza sauce, sun dried tomatoes, and vegetable broth.  Some basil, oregano, and red pepper flakes, and lasagna noodles (the only pasta we had) finished it off.

We topped it with shredded mozzarella and had a salad on the side.

We also finished the biscuits from Saturday night.

Tonight’s dinner?  Cheese tortellini, white beans, spinach, and leftover carnival squash tossed with olive oil, balsamic vinegar, basil, oregano, and parmesan cheese.


Tomorrow I’m chaperoning the overnight field trip to Bakersfield with the E-Business kids.  I went last year and it was definitely a fun time and a nice break from traditional work.  I’m excited.  🙂

And, because I’m a crazy person, I’m getting up at 4 am so I can fit in my 3.5 mile run.  Marathon training, baby.  If it’s at all possible to fit the run in, you fit it in.

Plus, I can sleep for 2 hours on the bus.  😀

Leftover Hodgepodge

Dinner last night was easy.  I added to the spinach apple salad leftovers and we heated the leftover pizza from Saturday.  There was also some leftover pasta salad from Grandma’s service Saturday morning.


Yeah, I eat a lot.  I know.

We also had the last of the wine from Saturday.




After dinner I soaked in the tub with classical music, the iPad (not typically most relaxing thing, I know, but it was playing the music and I was able to read blogs), and a magazine.  Then it was time for Boy Meets World and a pumpkin cake ball.

Our cat is a little psycho.  She was acting crazy, including running around on only her hind legs, all night.


I’m not sure what she was looking for.

You learn something new every day when you’re a new cat owner!

Owning the Stress

Tonight we strayed from our usual Friday night pizza and had burritos instead.  Reason?  We’re lazy.  And tired.  I had another really bad breakdown last night and I have the most amazing husband ever because he stays up with me.


We had salad of course, with a ranch/salsa combo.  And cheese.  Even though there was cheese in the burritos.  It’s all good.

Oh, and avocado.  Half an avocado per person isn’t gluttonous, right?  And neither is eating extra beans/cheese, right?  Because I totally did NOT do that.  Just like I did NOT scrape the bowl of cookie dough clean and add chocolate chips to what I scraped after making cookies for Grandma’s memorial service tomorrow.

Because I’m a new fur-mama, here’s more pictures of the adorable Oakley.  I’m totally becoming THAT pet-parent.




On the note of breakdowns and having an amazing husband, I’ve decided that I need to finally own the stress.  In saying that, I mean that I need to focus on relaxing.  I’m one of those typical women who doesn’t remember how to relax anymore.  And I don’t mean just relax in front of the tv (but I’m bad at that too).  I’m ALWAYS thinking about something – how icky my work day was, what I have to do tomorrow, etc.

I spent some time this morning googling relaxation techniques.  I found this article that had a lot of good stuff.  I need to be patient and give my body time to recover from the stress lately, and in the meantime I’m going to focus on learning how to truly relax.  I took a bath tonight while playing classical music and reading my book.  We had some wine with dinner and I’m going to keep taking Zzzquil for a few days until I feel better at calming myself down.

This is going to be a process and is probably going to take time, but I have to do it.  It took a traumatic life event to make me realize it, but I’ve needed to do this for a long time.  I always look to the next thing and don’t know how to live in the moment.  That needs to change.

I’ll keep you updated.  Hopefully it doesn’t take TOO long!
