Short Long Run

Sounds weird, right?  I decided yesterday not to do an actual long run.  After my long day on Friday I really needed to sleep in a bit, and I’m also trying to make a conscious effort this week to give my body a break.  I ran 3.5 miles on Wednesday and decided to just do 5 yesterday.  Then this next week I’ll get back to normal.

I also needed time to get ready for Kelly’s wedding (post to come!) and just didn’t want the stress or pressure.  I felt a bit guilty, especially because between birthday festivities and a wedding I have been and will be eating more than usual, but I’m trying to shake the guilt.  It’s the dancer brain that still takes over.  :-/

To keep myself feeling full for a while before the wedding, I made a batch of high protein pumpkin breakfast quinoa.  I used chocolate protein powder because we didn’t have vanilla.  I thought I was going to fall in love with this since it’s pumpkin, but honestly, I didn’t.  I’m not sure if it’s because I didn’t stir it as much as I should have or because I didn’t use a super ripe banana or because chocolate protein powder really just isn’t a good option or what.  It wasn’t bad, but the quinoa wasn’t quite as soft as I like and there was more banana taste than pumpkin.  I’m sure if I adjust it a bit and actually stir constantly like I’m supposed to it will be better.

I multitasked by working on the long day blog post that I still didn’t finish, doing my make up, talking to my sister, and doing my nails.  Then before I knew it we were leaving for Kelly’s wedding!  Post and lots of pictures to come!

House Buying

As I mentioned before, we are in the beginning stages of looking for a house.  The first step is to submit all kinds of paperwork to get pre-qualified for a loan.  It’s a pain.

We have to dig up a bunch of different documents – w-2’s from the past two years, pay stubs, tax returns, retirement statements, etc.  Since I worked at three different schools in the same year at one point, I have three w-2’s from 2010 and have to find all of them.  This is proving to be a challenge because either a) I lost them b) I threw them out or c) they’re hiding somewhere because we moved.

I’ll be able to find everything, it’s just going to take some work and digging and calling places to ask for copies.  Mat has to do the same. I’m hoping this is the most frustrating part of it all.

And with that, it’s time for Boy Meets World and then bed.  Mat has a 4 am shift tomorrow and I have my long day.

Salads for Dinner

Anyone who knows me knows I’m obsessed with salad.  Before I started running, I ate a LOT of it.  Like, tons.  At restaurants that’s pretty much all I would order.

Then, after I started running real distances, I found myself craving real food.  Food like peanut butter and almond butter and CARBS and food with OOMPH.  You know?

But I still like my salad.


The salad on the right is a basic romaine/spinach combo like we make every night.  Tonight I decided to go with the slightly unhealthier barbecue ranch.  There were lots of veggies and then I added shredded cheese, crushed tortilla chips, and ranch and barbecue sauce.  It was heavier on the ranch tonight than usual, but that was because there wasn’t much barbecue sauce left.

The salad on the left, though, is a different story.  I prepped it earlier today and let it sit in the fridge so the flavors would come together.  It’s Mango Avocado Black Bean Quinoa Salad.  I used regular quinoa rather than the red from the picture in the recipe.

We’ve made this recipe once before, and it’s delicious.  Very fresh and citrusy.  I’m trying to enjoy these kinds of flavors while it’s still summery enough to make them.  However, I’m not gonna lie.  I’m looking forward to make chili in the crock pot and mac and cheese and other delicious comfort foods.

While I was eating I was half watching Breaking Amish on TLC (Mat is at work until 10:30 tonight 😦 ).  I didn’t see all of it and was doing two things at once, but what I did see was fascinating.  Hopefully I can see an entire episode next time it’s on!

And with that, I will be heading to bed soon.  I think I’ve finally learned my lesson about not getting enough sleep on Sunday nights.  I’m so glad tonight is the last Sunday night Mat will work a late shift – starting next Sunday he’ll be home at this time!

I might eat chocolate first though.  It’s sort of a requirement.

Pesto Caprese Quinoa Salad

Back on August 26th, we went to a Tchaikovsky concert at the Verizon Wireless Amphitheatre with my parents, my sister, and her boyfriend.  We all contributed to the picnic beforehand, and our contribution was this pesto caprese quinoa salad.  It was super delicious and, like most quinoa recipes, quite satisfying.  I will definitely make this again.









  • 1 cup quinoa
  • 1 shallot, roughly chopped
  • 1/2 cup tightly packed basil leaves
  • 1 clove garlic
  • 1/2 tsp red pepper flakes
  • 1/4 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 cup cherry tomatoes, halved
  • 1 cup small fresh mozzarella balls, halved
  • salt and pepper to taste


  1. Put the dried quinoa in a medium pot filled with plenty of water. Bring the water to a boil and boil the quinoa for 10-12 minutes or until all water is absorbed.  Transfer quinoa to a bowl and set aside.
  2. Combine the shallot, basli leaves, garlic, red pepper flakes, olive oil, and vinegar in a food processor and process for 1-2 minutes until smooth.
  3. Drizzle the basil vinaigrette over the quinoa and toss to combine. Add the cherry tomatoes and fresh mozzarella to the quinoa and stir to combine. Season with salt and pepper as needed. Serve immediately or refrigerate and serve at a later time.

I’m On Another Blog!

A while back, I saw a guest posting opportunity on RobinsBite.  I heard about it from a Healthy Living Blogs weekly email and immediately sent in my information.  The post is called “Inside the Fridge” and was an interview about our eating and shopping habits.  Please check it out here!!!  And then tweet it!  Shout it from the rooftops!  I’m soooo excited to be featured on another blog!  Leah was great to work with and made the whole process really easy and fun.

I was at school until almost 6 pm today with dance production practice.  There have been some changes with the assembly and we now have more time to perfect the dance, and it kind of threw everyone for a loop.  In the end it’s better, but now I also have to readjust my math planning to accommodate the change.


Dinner was leftover quinoa paella again.  Doubling the recipe made a lot!  After 3 dinners (and Mat eats a lot) there’s still enough for a small lunch.  I have to say though, even though it was delicious, it doesn’t keep you full for as long as you would think.  Mat ate an extra snack both last night and tonight, and even I feel like I could eat more.  Adding shrimp like we were thinking the other night is probably a good idea.

I’m going to be really sad when melon and strawberries go out of season.  I know that will happen pretty soon, so I’m eating as much as I can until then.

Quinoa Paella

Tonight we made this recipe.  We altered it to have no mushrooms or olives (eww) and added a can of corn.  We also doubled the entire thing (the full can of corn was for the doubled version).  It was delicious!  Nice and smoky with a spicy kick too.  We were thinking it would be excellent with shrimp added to it.  As soon as Mat suggested it I think my eyes went wide and I said, “Yes, we must do that.”


We paired it with a salad (of course) and the last of the honeydew from Saturday night.  And, we have tons of leftovers for tomorrow!

I was proud of myself for getting some more choreography figured out for tomorrow’s practice.  I’m tired, but excited to almost finish the dance tomorrow.  Hopefully it gets totally finished on Wednesday!


Leftover “Pasta” and a Funny Cartoon

For lunch today, I finished off the zucchini pasta from the other night.  It’s the second day in a row I’ve had dinner leftovers instead of a sandwich!  Yesterday I finished off the quinoa salad that I made when Diana was here.

I’m having a hard time working the blog into my new schedule.  Once I start to get it where it’s working better, I have a super busy couple of days and I miss a post.  Argh!  Any advice from those who work full-time and blog?
