Meet Oakley!

We have a kitty!


She is not impressed.

As I sit here typing this she’s on the couch with me examining the laptop.  I have to admit, I never thought I’d welcome a cat so quickly.  But she’s really sweet and affectionate and loves attention.  It’s almost doglike – that’s my kind of cat! 🙂

I like being a fur-mama to a fur-baby.  Fur-baby #1 anyway.  Fur-baby #2 will be the Corgi named Riley that we’ll get as soon as we have a house.  Technically we should wait until summer when I’m off and have time to deal with doggy training, but if we get a house before that I can definitely see myself not wanting to wait.

Anyways, there will probably be way too many pictures of the cat (and the dog when we get it) on the blog, so I’ll switch to dinner.

We kept it simple with Boca Burgers on sandwich thins and barbecue ranch salad.


Yes, I still eat a lot of salad.  And I eat a lot of ketchup.  Thanks Steph!  😀

I’m debating the pumpkin spice cake balls.  We still have some in our fridge.  I meant to eat one last night and then ended up eating two.  Doh!  I’m also planning a running break this weekend since LA Marathon training officially starts on Tuesday and we’re going to San Diego for the night on Sunday.  I guess that means I should stop eating unnecessary things?

It means I should.  Doesn’t mean I will.  🙂

Boca Burgers

When I was at Costco last Friday, I bought several things that I’d been meaning to buy but was waiting for more money in the bank to do it.  Since I got the double paycheck the same day as Mat got paid, Friday was a perfect day to stock up.

One of the things I bought was Boca Burgers.  I’ve only had one once and Mat has had them twice, but we both discovered that we really liked them.  Tonight, Mat made them while I was at ballet since he had to get to bed early and I reheated mine when I got home.


I toasted a sandwich thin (I don’t generally use actual hamburger buns) and when I put it on the plate this is what happened.  Mickey!  I totally texted this picture to Steph.

I went plain today: 2 slices of American cheese and plenty of ketchup.  I probably could have gotten more creative with the toppings/condiments, but since it was getting late I went with easy stuff.

Ballet tonight definitely kicked my butt.  There were only 2 of us in class, and we were lucky they didn’t cancel it.  Having essentially a private lesson was pretty awesome, I must say.

I’m typing this as I eat and watch Four Weddings.  Mat is already asleep and I would love to be sleeping soon too.  Gotta get on that!

Sunday Morning

We realized this morning that today was the first time since we moved here in January that we slept in and made pancakes for breakfast.  It’s one of those “cliche” things I’ve always wanted to do but we never can: Mat works every Saturday morning and we usually are up early for church on Sunday and then he has to work in the afternoon (and in between has to do homework or something).  Today we were going to go to church here in Irvine, but the service we like is at 8 am and since both of us really needed to catch up on some sleep, we decided to just sleep in instead.

And make pancakes.  Whole wheat buttermilk pancakes.  And eggs.  Mmmmm


I put peanut butter on one pancake, almond butter on another, and that lonely one in the picture got syrup poured all over it later.  On my eggs I did half fresh salsa and half ketchup/hot sauce.  Clearly I was indecisive this morning.  🙂

And of course I had coffee.  Goes without saying.

Soon I’m leaving to go hang out with Steph for the day.  We haven’t had girl time in forever and I haven’t seen her new apartment at all and she’s lived there since June.  I love 3-day weekends – so much more time to do the things you want to do!

Our Friday Dinner Lately

I was starving when I got home from work this afternoon, so I sliced an apple and had it with almond butter:

I still felt empty after that, but I wanted to wait until dinner.  We’re both trying to be healthier and not eat more than necessary.  I also have to just deal with being hungry until my body gets used to the work schedule again.


I believe this is the 4th week in a row we’ve made eggs for dinner.  We tend to do eggs when we either 1) are too lazy to go get pizza 2) don’t feel like spending money on pizza 3) want to eat healthier than pizza or 4) all of the above.

In case you couldn’t tell, pizza is generally our go-to Friday night dinner.  It comes from the fact that both of us grew up having Friday night pizza and it was always a fun thing that both of our families had the same little tradition (it was one of many similarities between us/our families we discovered when we were first dating).  Pizza is a nostalgic thing.

But sometimes we want to switch things up.  Eggs is a favorite.  Heck, any breakfast for dinner is a favorite, eggs is just the easiest and the thing where you already have the ingredients.

I think Mat makes better eggs that me (I’m not sure why, scrambled eggs are hard to mess up, but there’s just something about his that I think are better.  So, I kind of make ask him to do it.  🙂

He starts with onions, bell peppers, broccoli, and when those have cooked a little adds some spinach:

We watched Boy Meets World on DVD during dinner (another Friday tradition from growing up: eat in front of the tube).  For dessert, port wine and chocolate along with more Boy Meets World:


I have another 10 miler planned for the morning (and hopefully back up to 14 next week) and then need to get some things done for work before we hit the mall to get Mat some clothes.  I’m crossing my fingers the sun doesn’t come out too early tomorrow!

Grilled Cheese Dinner

When I got home from work today, I was pooped.  I just felt drained.  I was really on the fence about going to ballet, partly because of that and partly because I wasn’t sure about paying for it.  Which I think I mentioned in another post today.  Oops.  See?  Told you I was drained.

I ended up deciding to go.  I figured I may as well pay for 4 more classes because it will take me into the middle of June, which is perfect. Plus, Amanda is hopefully going to go with me next week and then I’d have to pay anyway.  And I wouldn’t pay for just one class – it isn’t worth it.

Deciding to go was clearly not the greatest idea.  I didn’t have a good class.  I just felt weak and out of it.  I think it’s a combination of a lot of things: not enough sleep, getting over a mild cold, and general fatigue that comes from the end of a school year.  But, now it’s over and I can shake it off and move on.

The layered bean enchiladas we made a couple nights ago were supposed to last for 3 nights.  They did not.  I think it’s because this time we layered them but last time we made this recipe we rolled them.  Rolling them makes you eat less somehow.  I figured this out because Mat used the same recipe as last time and the only change was to layer them.  Last time they easily last 3 nights for both of us and this time there was only enough left for one person tonight.

So, I told him to go ahead and have them and I decided to make myself a grilled cheese sandwich when I got home from ballet.  Sometimes, you just crave something random like that.  I’ve been craving random stuff and been generally foody the last day or so (gotta love that time of the month!) so it was perfect.  I paired it with a salad and then decided to have a glass of chocolate milk too.  That is certainly something I haven’t had in a while.  It was delicious.

Yes, I eat my grilled cheese sandwiches with ketchup.  Does anyone else do that?

Tomorrow is my BTSA exit interview – at this time tomorrow I will be officially done with BTSA forever!

Countdown: 15 days of school and 37 days until our wedding

There is one very nice thing about BTSA: you’re given two days off to use to do observations of other teachers and otherwise work on BTSA.  I used one of them in March and the second one today.  The one in March was spent doing a lot of BTSA work.  The one today was spent doing some BTSA work but also taking care of other random little things.

First thing I accomplished: getting a good night’s sleep.  It was sheer bliss to wake up this morning and NOT have to spring out of bed to go for a run and get my butt to work.

Second thing: a visit to the doctor to take care of the acne that flared up on my back a while ago.  I kept hoping and hoping it would go away, but it never really did.  Now, with our wedding 49ish days away, it needs to be gone STAT.  I got some new prescriptions and I’m hoping it does the job.

Third thing: a visit to the mall to get Mat wedding shoes.  More on that on the wedding page!

Fourth thing: Starbucks half price frappy hour!

Fifth thing: getting a little something to wear under my (somewhat see-through) dress for this Saturday’s BRIDAL SHOWER!  And, I can easily use it for under other dresses too.  You know, those ones that cling a little bit in the areas you’d rather not have them cling?  Basically spanx booty shorts.  🙂

I failed at taking pictures of our dinner tonight.  I’m just not enough in the habit yet!  We kept it easy: salmon patties (from the freezer section at Costco – we love Costco!) and a big barbecue ranch salad.  We try not to have barbecue ranch too often since it always involves shredded cheese in addition to the more caloric dressing combo, but sometimes you just crave it.  I tend to slather my salmon patty with ketchup (hey now, don’t judge), and ketchup somehow beckons for a spicier salad.  I’m not sure why.

Tomorrow is Friday and I’ve planned for an easier one – giving quizzes all day – but it’s going to be a very busy weekend.  Morning run on Saturday (still trying to decide how far to go since I just did the OC Half), my BRIDAL SHOWER, (post on that will DEFINITELY happen quickly), and Mother’s Day.  Somewhere in there I need to get some grading done.  Whew!
