Crock Pot Teriyaki Chicken

Today was a rest day.  It was much needed after yesterday’s 22 miler!  I also realized today after reading Skinny Runner‘s post that we totally ran past her yesterday.  Not that I’m a creeper or anything.


I gorged on cereal and also had coffee.  Nothing unusual.



During breakfast the cat posed for me.  Also not unusual.

Tonight’s dinner was delicious and oh so easy.

It was yet again a crock pot recipe.  If you want some good teriyaki chicken that takes about 5 minutes to prep, make this recipe.

Crock Pot Teriyaki Chicken


4 frozen boneless skinless chicken breasts

1 cup Trader Joe’s Soyaki Sauce

1 20-oz can pineapple chunks

dash ground ginger


1. Put chicken in crock pot.  Cover with remaining 3 ingredients.

2. Cook on low for 10 hours or on high for 6-8 hours.  Serve over rice.

We served it with steamed zucchini that I covered in Parmesan cheese.  Obviously.



And finished the evening off with some ice cream while catching the end of the Oscars.

The Husband’s Chicken Piccata

If you follow me on Instagram, you will have already seen what Mat made for dinner last night.



When we were first dating almost 5 years ago, Mat made me chicken piccata from scratch.  He says he made it once a year ago when we first moved in, but I don’t really remember it.  😦

It’s some amazing eats.  I’ll post the recipe later on!

We had some wine with it.



While I washed dishes Mat ran to Ralph’s to get more ice cream.  We were almost out and naturally Saturday nights are better with ice cream.

We dug in the freezer for my leftover chocolate birthday cake to have for dessert.



We also watched The Hangover 2 from Netflix which neither of us had seen.  HILARIOUS.

It was definitely a lovely way to spend a Saturday night after a long run morning.

Super Commercial Game

Yesterday for the Super Bowl, Steph came over to hang out.  We were really interested in it for the commercials and the excuse to eat junk.  To us (as a friend put it), it’s the Super Commercial Game.  Even then we didn’t pay attention to every single commercial.  But it was still good times.

Mat made his guacamole and we also had salsa and cheddar/sour cream chips.  Delicious.

I also made chicken tenders, but I forgot to snap a picture.  Dang it!  I always realize when it’s way too late.

But it’s ok, because I made sure to take a picture of dessert.  I had some lava cookies in the freezer that I warmed up and topped with very Super Bowl appropriate ice cream.

I think we enjoyed the halftime show and the power outage the most.  It amused us.  🙂

Oakley wasn’t very interested in the game either and decided to plop on the floor in odd positions.

And now it’s Monday again.  Honestly, where do the weekends go?

Starbucks, Pizza, and Ice Cream. My Kind of Friday.

This morning, the cat decided to walk on me.

We’ve been letting Oakley sleep in our bed, and it’s usually fine.  Last night, however, she decided to move around which woke Mat up.  He turned over, which woke her up more.  She then started attacking his feet through the blankets.  At some point during all of that she decided to start walking on top of me which naturally woke me up.

Upon waking up, I realized I had to pee.  So I did.  When I came back to bed, she kept crawling on me.  I decided to ignore her because I was pretty tired.  A couple minutes later I felt/heard a THUD by my head.  She had jumped from who knows where onto the spot right between our heads.  Weirdo.

I think at that point I put her back at the foot of the bed, and dozed off a bit until Mat’s alarm went off at 5.  Since she went out with him I was able to sleep for another hour at that point.

It was honestly more funny than anything else.  She’s a sweetie so I can’t be mad.

But now on to the more exciting things of this post: coffee and food.


I was long overdue for Starbucks, so I more than made up for it with a venti java chip frappuccino (light and sugar free of course).


With it I had my usual cottage cheese and granola.  I generally use low-fat granola from Trader Joe’s, but when I made the grocerty list for Mat today I put vanilla almond granola.  It’s not as healthy, but it’s so darn good and I haven’t had it in ages.


Lunch was nothing special – apple and half a pb&j.  What can I say, I’m a creature of habit.

Today we celebrated a birthday in dance production.  Josh turned 16.  We had surprise cake and ice cream at the end of practice.


I actually didn’t have any cake, but I did have a little chocolate ice cream.  I can’t stay away from chocolate.  Ever.

After a massive Costco run this afternoon, we finally settled in to our usual Friday night pizza.  We’re both sick of salad right now, so we steamed zucchini instead.

That’s my plate before covering it in parmesan cheese, having seconds on zucchini (also covered in parmesan), and a second piece of pizza.  Covered in parmesan, obviously.  I also ate Mat’s crusts because I always do.  It’s a thing.  I’ll tell you about it sometime.

Oh and then after the pizza we had ice cream and girl scout cookies.  I think I have a problem.


I’m not running tomorrow morning.  (Insert gasp here).  But it’s because I’m running the Surf City Half Marathon
on Sunday!  And then after that Steph is coming over to eat junk food watch the Super Bowl with us.  Should be fun!

But before we talk about pizza, can we talk about this??

That beauty is a venti salted caramel mocha frappuccino (light, of course, because not light would be excessive).  I got it for free.  It was amazing.  A perfect Friday morning coffee.

On to the pizza.  We haven’t had Costco pizza in forever, so tonight we indulged.

I didn’t finish the cake though.  It was a pretty big piece.

I’m hoping tomorrow’s run is better than last week’s fail.  I’m planning to get up at 5 (Lord have mercy) because it’s just too dang hot right now.  It was 90 in Irvine today.  We’re 10 minutes from the ocean.  I have roughly 13 miles planned and this time it doesn’t involve a strange loop right back to home before taking off for the real 11 mile part.  there’s something mentally ick about passing home again when you’re only 3.5 miles into a 14 mile run.  I can’t believe I did that many times back in the spring.

Mat has an early shift (3:30 am) tomorrow and theoretically should already be in bed.  It doesn’t hurt me to go to bed either.  Good night!

Family Dinner

I have no pictures from today.  I have no posts yet today and only 1 quick one yesterday.  It’s because I’ve been running around like a crazy person.  I honestly don’t think I’ve sat down at all yet today, until a few minutes ago, unless of course you could dinner.

It wasn’t for bad reasons, it’s just that there was a lot going on today.  I woke up super early (5:00) to beat the heat for my run, and it was a good thing too because Mat never actually set his 4 am alarm last night.  When we woke up to my alarm at 5 we realized he was supposed to be at work.  Oops.  He called right away and told them what happened though so it doesn’t seem to be a big issue.  Plus it’s never happened before and obviously shouldn’t happen ever again.

After my run, I went to Target for a few things, came home, and set to work making homemade cookies n cream ice cream and homemade red velvet cake.  I washed and cut lettuce and veggies, dusted, vacuumed, etc etc.  I even managed to get one coat of new nail polish on my toenails.

Nicole and Ryan came over for dinner tonight and Mat made his pizza.  This time he made one of the usual with red peppers and sun-dried tomatoes and then make a Mexican one with salsa verde, diced green chiles, and refried beans.  It was really good!

The cake and ice cream were definitely a hit too.  I was quite happy about that.  🙂

It’s crazy how we’re all adults and married.  I still feel like a kid.  Sometimes I wonder if I’ll ever feel fully like an adult.

Today Was a Fun One

This morning at church, the choir that my mom and aunt sang in while in high school (they both grew up in that church – it’s definitely been in our family!) had a reunion.  It started through Facebook (naturally) several months ago, and it was amazing how many former choir members showed up.  Some flew in, some drove in from far, they stayed at a nearby hotel, and they had a big reunion weekend.

The choir was called “Humneo” which is Greek for “sing praises.”  It started in 1971 and toured various areas of the country in a school bus over the next 10 years.  I knew it was a big deal for my mom and my aunt, but I never realized until today just how much it was a part of their lives.

The choir members not only went out for drinks at the hotel on Friday night and rehearsed on Saturday afternoon, but they also got to church early today to practice more.  One of the coolest things while listening to them sing, besides seeing how happy they all were, was realizing that the songs I sang when I was a little kid in the choir were from Humneo.  That really took me back and was just so unbelievably cool.

When I got home I wolfed down some cereal and finished my coffee before I finished straigtening up for Diana to come over.



At 1:00, my good friend and sorority sister Diana came over for some quality girl time.  We had some wine and quinoa salad for lunch:

this is not my portion, it’s the serving bowl.  i also forgot to take a picture of my wine. what can i say, when i’m having a good time with friends i sort of forget the pictures.

Diana and I had a fabulous time just hanging out and chatting.  I made chocolate lava cookies, but Diana was feeling up to dessert so she took hers to-go when she left around 8.  I love hanging out with Diana and wish I could do it more often.  Sometimes being an adult and having to work is so annoying!


I had a banana with almond butter for dinner, along with a lava cookie (with vanilla bean ice cream, Hershey’s, and a few extra chocolate chips):



And now I find myself NOT in bed at 10 pm on a Sunday night like I should be.  I’m afraid it’s going to be a rather tough week since I haven’t had a 5 day week with students since June.  I’m not used to needing that much energy!  Fortunately there’s a 3-day weekend to look forward to though!

Time to unwind for bed, and try not to think about the fact that Mat is still at work.  😦  Another reason I’m not a fan of Sunday nights.
