Sunday Morning at Church

This morning we got ourselves up and out and to church.  We were able to give my parents a set of wedding pictures which I know my mom is happy about.  🙂

Church this morning was really good.  The sermon was exactly what I’ve been needing to hear lately, and I’m hoping that I can get myself back on track.

After church we stopped at Mat’s parents’ house to give them their copy of wedding pictures.  They just got back from a 2 week European vacation complete with Mediterranean cruise.  We got presents!


Pasta from Italy, saffron and herbes de provence from the Turkish spice market, apple tea, and lemoncello complete with a stopper.  Fantastic!!


When we got home, I was pretty hungry.  I’d munched on some frosted shredded wheat before we let for church but it wasn’t a meal.  I had one of my usuals: cottage cheese with Greek yogurt, granola, strawberries, and honey:


Mat made himself a giant omelet with jalapeños, spinach, and cheese and topped it with the last of the green chiles and some fresh salsa.

And now I’m on my own for the rest of the day because Mat is at work.  😦   On the bright side, we finally got our blu-ray player hooked up to the internet and signed up for a one month free trial of Netflix.  I’ve been prepping dinner in advance and watching Law and Order SVU reruns through Netflix while doing it.

The rest of the day (after finishing dishes and laundry) is going to consist of rest.  Lots of rest.  I need to have a good running week!

Mmm Paninis!

In dance production today we ran the mile.  I ran with the girls and finished in 8:33.  I never knew what my 1 mile time was until today.  I was hoping it was closer to 8 or even under 8, but I really wasn’t pushing it today because it was afternoon and pretty hot/muggy.  I also have never run the track with a bunch of other kids around so I guess I was a little cautious.  Still though, 8:33 wasn’t bad at all.

My afternoon snack was simple: Greek yogurt with cereal and honey:

I got the dance shoes ordered today and hope the order the bags soon too.  Hopefully the reimbursement goes through quickly.  I’d really rather not be out $400 for several months.


Dinner was paninis.  Tuscan bread with pesto, mozzarella cheese, avocado, spinach, and heirloom tomatoes.  Paired with salad.

There was half an avocado left, so naturally we ate it on the side.

He ate two.  Except I sort of had the last few bites of his second one.  Shhhh….

Seriously delicious.  The only downside to paninis is that you always think they’re going to be fast but they’re not.  Hence it is 9:45 and I’m finally writing this post.  Oh well.  They were worth it.  Sooo good!

Tomorrow is Friday and then a 3 day weekend!  Almost made it through the first full (tiring) week of school!

Busy Busy Busy

This was my snack today.  I inhaled it:


Greek yogurt with honey.  I swirled it all in.  Like I said, I inhaled it.  I swirled it all in before I took the pictures because I was so starving.

Sort of like how I was so distracted that I never took pictures of my breakfast or lunch today.  But honestly?  Breakfast and lunch were boring today.  For breakfast I had cottage cheese with strawberries and granola like on Friday, and for lunch I had an apple and half a pb&j like I have every work day.

Today was a long day full of meetings.  I basically worked through lunch trying to get a jump start on organizing my classroom.  I have most of tomorrow to work, and my sister is coming to help a bit, but I also have an afternoon meeting related to dance production – something that anyone with an account in ASB has to go to.  I’d rather not be stuck at school late tomorrow, so I need to be super organized about what I need to get done and when tomorrow I’m going to do it.  I think I’ll go in as early as possible – I’d rather do that than be there late.  Plus I like working in the morning when it’s quieter.

Either way I’m going to blast some music and wear shorts and a t-shirt.  Is it weird that I’m excited to go to work dressed like a bum (well not a total bum, but bum compared to how I’ll be dressing on Wednesday for the first day)?

Time to get a few things done and printed so I can make copies tomorrow.  And I need to do abs and weights.  And the jacuzzi is calling my name…

First Day Back

The first day back to work was a pretty easy one.  We had various staff development presentations from 8-11:30 and were done for the day.  It was nice to ease back into work like that.  We have more staff development tomorrow and Monday and then have all day Tuesday to work in our rooms.

One of the first things I did when I got there was check my teaching assignment.  As I hoped, I have periods 1-4 of Algebra 2, 5th period prep, and 6th period Dance Production.  This excites me GREATLY.  I’ve taught Algebra 2 every year since I began teaching which means I’m very comfortable with it and won’t have to do a whole lot of prep work besides tweaking things to make them better.  I’ve taught Geometry a lot before, including both previous years at Century, and while it’s interesting, it’s not my favorite area of math to teach.  I’m pretty excited to not have that subject and to just have one math class to worry about.  Dance Production is already going to be challenging as I figure out what I’m doing!

However, I’m excited about teaching dance.  I’ll feel better once I get some questions answered on Monday when the other dance teacher is back, but overall I’m excited.  It will be so nice to teach something that’s been a passion since I was little.


I ate breakfast before work (I usually bring it with me) because I didn’t need to get there early to work in my room and prep for the day.  I finished the last of the Greek yogurt and topped it with strawberries, cereal, and honey.  Naturally, I had iced coffee with it (and took more iced coffee with me).


After work I went to Costco because we were out of or running low on a bunch of basics.  I was STARVING when I got home (that’s what happens when you eat at 7 am and don’t get home until 1 pm).  I had bought almond butter at Costco and was totally craving it, so I made some oatmeal, chilled it, and added milk, almond butter, a few chocolate chips, and a banana.


This afternoon is chock full of school things, blog things, and going to ballet.  I have lots to do to get ready for the new school year and lots of things buzzing around my head for the blog.  Thankfully, the new school year is bringing new motivation.  It also helps a LOT to know what I’m teaching and to know that it’s something totally manageable.  I think *fingers crossed* I’m really going to like this year’s schedule.  🙂

Busy Morning

I had set my alarm for 7 this morning but woke up before it.  I figured since I was awake, I may as well get started on the stuff I had to do.  I headed straight out to get gas and put air in the car tires.  My poor car – it was getting pretty low on gas and the tires were just barely above 20 psi.  They’re supposed to be at 40.  Oops…

The main thing is that I thought to fix up the tires before driving 260 miles to Vegas today.

The fridge is getting barren since we’re leaving for a few days, so for breakfast I had a good-sized bowl of Greek yogurt (trying to finish as much as I can so if we do end up throwing it out, we won’t throw out too much.  With it I had a few strawberries, honey bunches of oats, and some of the new cereal from Attune Foods.  (Don’t worry, I’ll be doing a full post on their yummy cereal later, probably after Vegas.

I also drizzled some honey on it and had iced coffee on the side.

Then it was time to start packing.  I think I’m just about done except for the ice chest.


We are SO excited for this little vacation.  Yeah, I have to start back to work on Thursday, the day after we get back, but I’m trying not to think about it.  One last vacation!!


Quinoa Balls

Yesterday I mentioned that I had made quinoa balls and that the recipe was coming.  I think this is a new record for me to say something is coming and then to actual do it.  Go me!

These are delicious little bites of sweet, protein-packed, carby goodness.  Yeah, there’s sugar in them, but there’s also good stuff like quinoa, oats, and peanut butter, so who really cares about a little honey and chocolate chips.  Right?  Right.

Quinoa Balls (adapted from here)


2 cups old fashioned or quick-cooking oats, dry

1/2 cup quinoa, dry + 1 1/2 cups water

1 cup dark chocolate chips

2 tsp vanilla extract

1 tsp sea salt

2 tbsp peanut butter

2/3 cup honey


  1. Combine the quinoa and water in a small saucepan and bring to a boil. Reduce heat and simmer for about 12 minutes, until quinoa has absorbed all the liquid. Fluff and scoop quinoa into a large mixing bowl.
  2. Add oats to quinoa and mix well. Bring honey to a simmer on the stove then stir in the vanilla extract and pour on top of quinoa and oats. Mix until well combined.
  3. Let mixture cool before adding the chocolate chips, peanut butter and sea salt. Mix well with your hands so the peanut butter is evenly dispersed but be careful not to melt the chocolate chips! Chill dough in fridge for an hour.
  4. Using wet hands, gently roll mixture into golf ball-sized balls. Place balls on a plate and chill for at least two hours until firm.

I adapted this by leaving out the seeds, nuts, coconut, and dried fruit simply because the first time I made them (a few months ago) I didn’t have those ingredients on hand but I wanted to make them NOW.  And, in this house we’re rather simple creatures, so peanut butter and chocolate sounded like a good way to go.  Also, the ingredients I listed are double what was in the original.  I did this for two reasons: 1) I was using quite a bit less dry ingredients overall by leaving out the nuts and things, and 2) I wanted to make darn sure we had plenty to bring with us.

I got 18 good size treats out of this, and have exercised amazing willpower by not eating any of them.  Mat has done well with willpower too, which is definitely saying something since these very much resemble cookies!

Today I’m motivating myself to clean.  So far I’ve changed the sheets on the bed and I’m pretty proud of that accomplishment.  🙂

I walked 3.75 miles on the treadmill this morning, doing roughly the same incline intervals as last week: inclines the last 1/4 mile of the first mile, the last 1/2 mile of the second mile, and the last 3/4 of the third mile.  The treadmill decided to stop on me approaching the end of the third mile, so I also did the incline for the last 1/4 miles of the whole 3.75.

After my ab workout, weights, and extension stretching, I quickly showered and got the sheets changed.  I finally sat down to my all-too-often-eaten cottage cheese/Greek Yogurt/granola/honey/strawberries and iced coffee:

On the agenda today:

  • dust
  • vacuum
  • get boxes into storage
  • prep some of tomorrow’s meal for when Mindy and Joel come over
  • try to work on more stuff for school
  • get up the guts to call the cable company and try to negotiate a lower rate

Tomorrow I need to start thinking about packing for Vegas – after my run and hair appointment.  I can’t wait to see Cirque du Soleil’s “Love” again!
