Chicken Taco Chili

Tonight’s dinner was chicken taco chili in the crock pot. We used this recipe. We’ve made it once before, but it was a long time ago and was before we cut out chicken. Now we’re back to eating chicken again. I have to say, it makes life a lot easier. Trying to menu plan on a vegetarian diet is difficult because I felt more limited. I know there are lots of good veggie recipes out there, but I haven’t had time or energy to really find them.

Plus, I think my muscles are going to like me better eventually if I feed them more animal protein.


We had salad with it, again using lettuce from Alegria Fresh.

We also finished the rest of the biscuits. I had three. Shhhh…

And then she laid down randomly during playtime. Who knows.

Now that I’ve posted way too many pictures of the cat for one night, it’s time for Big Bang Theory and then bed. 5 am wake up call for the first time in weeks. :-/

Loving the Leftovers

Tonight’s dinner was leftover Boca Burger enchiladas.  It’s really nice when the recipes that take a little longer last for 3 nights.  Most things last 2 nights, but 3 is extra good.  We took a break from them last night with paninis which enabled us to save the enchiladas for tonight (when I get home the latest out of any weekday) and tomorrow night (I go to ballet and we need something easy).

I also just have to share how much I’m LOVING blogging.  I love seeing my blog pop up in other places like Inside the Fridge and Get Me Through the Week.  I’m even thinking about going to the BlogHer conference next year.  I’d also love to go to Healthy Living Summit, but it’s usually the weekend right as school is starting so unless it’s on the west coast, it’s pretty hard to get to.

Kelly’s Shower

Hi Kelly, I know you’re reading this.  🙂

I sadly do not have a lot of pictures from the shower.  And half of what I have are her gifts.  My excuse for failing at taking pictures?  Not forgetting my camera (which I did do, but that’s not an excuse because iPhones are just as good), but having such a fantastic time that I forgot I had my phone with me.

It’s sad, really.

But it was a lovely time.  Yummy food (scones with clotted cream OMG) and a thoroughly entertaining game.  We played the toilet paper dress game and it had been decided ahead of time that Kelly’s littles would be the mannequins for the two teams.  That meant that Anne and I were the mannequins.  It really was just fine with me since that meant I got to stand there and didn’t have to make any decisions.  🙂

I’m sure I looked quite ridiculous, but it was fun just the same.  If I get ahold of the pictures of it I’ll definitely post them.

That last one was pretty funny because she was sawing away at the tape with half of a pair of kitchen shears LOL.

I stayed for a while after the shower was over just chatting and catching up with the girls.  I love that everyone is getting married because it gives us all easy reasons to get together.  😀

When I got home, I was suddenly starving.  It must have been a combination of not eating a whole lot at the shower and having really sore muscles/working out more lately.  We had some random Mexican leftovers from making Mexican pizza last weekend, so I threw together a taco salad:

I’m also craving ice cream.  Oy.  Maybe I’ll have a little just to satisfy the craving.  We’re working on burning copies of our wedding photos for our parents and then we’re going to watch a Boy Meets World before hitting the hay.  Based on this morning, I clearly need my rest!

Usually I Don’t Bring Work Home

If you’re a teacher, it probably sounds disgusting that I don’t usually bring work home.  But it’s true.  With the exception of Friday quizzes that don’t get graded somehow in between things during the day, I really try not to bring work home.  I get my planning done during my prep period or in the morning, and I’d rather stay after school an extra half hour than bring stuff home.  Bring work home, while sometimes unavoidable for a teacher, is never healthy.  I discovered this the hard way.

However, today I had to do work at home.  I just haven’t had a chance to finalize my syllabus and all of those first day/week of school type things.  So, for a good 2 hours I was sitting with my laptop working on stuff.

It’s interesting because the concept of working from home has intrigued me in the past, yet somehow that doesn’t feel the same as taking work home.  Who knows.

After I finished my work, we sat in the jacuzzi for a little while.  It wasn’t as enjoyable as usual because it was still pretty warm outside, which was a bummer.


Dinner was leftover bean and rice stir fr from the other night paired with salad and cantaloupe.



Because I’m a bit anxious about work, I’m craving chocolate BADLY.  But I’m trying really hard to resist.

Another Inventive Dinner. Sort of.

Af the mall I had a (not pictured) Godiva truffle and a (also not pictured) skinny iced mocha coconut latte (their blenders had broken so I had a mocha coconut frappuccino alternative, only to be told right after getting my drink that the blenders were back or working or something but I didn’t bother having them make the frappuccino because I didn’t want to keep waiting) we went to Macy’s to see if there were any blazers/sport coats for Mat.  We wandered for a bit and nothing really caught his eye except for stuff that was too expensive (of course).

We wandered into Williams-Sonoma because he still has a gift card, but again saw nothing except for things that were more expensive than what’s on the gift card.  Finally, we went to Hallmark to get a couple of cards for upcoming events.  By this point I was over it and wanted to go home, so home we went.

Mat made an awesome appetizer tonight:


Toasted buttermilk bread from Trader Joe’s with pesto and shredded cheese.  It was my idea to use up the pesto by making a toast appetizer, but he thought of the cheese and then arranged the pieces all pretty-like.  🙂

Dinner was a concoction using the leftover cooked brown rice from the other day.  We tend to make more rice or quinoa than we needed for a particular recipe, and then it ends up in the fridge and is lonely.  So we usually then find a way to use it in something else.  Tonight’s something else involved this stuff:

pepper, salt, chili powder, red pepper flakes, cumin, cayenne pepper, corn, black beans, and chopped onion and garlic

He sautéed the garlic and onion, added the seasonings, and then added the rice.  The corn and beans went in next, and he also added salsa and some chopped bell peppers at the end.

I have no pictures of the finished product.  I thought he took one but I guess not.  I also failed miserably at taking a picture of my plate tonight.  I’d gotten so good at that too!  I mean, I even took a picture of my lunch at work yesterday in which my colleagues probably thought I was nutty!

Oh, well.

This was fairly similar to the spicy quinoa stir fry I made a while back.  We served the finished product in warm tortillas with shredded cheese, Greek yogurt (it’s our sour cream substitute), and more salsa.  We had a salad on the side.

Dinner took a while to finish because we were talking about work and life and things.  It’s so weird to be adult enough that you talk about work and life and things.  So now it’s almost 10 pm and we haven’t had our required port wine and chocolate like last night:


Yes, that’s totally last night’s picture.  That’s because I’m writing this as he’s pouring the wine and dumping the chocolate chips into the cute little bowls.

And we’re also going to watch Boy Meets World again.  And then probably pass out.

The Second Full Day Home

Today was the second full day we were back home at our apartment.  For me, it’s been almost weird to be home.  I was gone for almost a week leading up to our wedding (staying at my parent’s house), then was back for a few days as we got ready to leave for Fiji (but spent one of those days at my parent’s house opening presents and spending time with my aunt and uncle from New York), and then we were gone for almost 2 weeks.

The apartment was a mess when we got back on Sunday night.  All the wedding gifts were stacked on the floor, there was a TON of laundry to do (and still is), and we also have been suffering from jet lag.

Yesterday we ran errands (Target and Trader Joe’s) and began cleaning and organizing. We eventually pooped out.

Today we ran more errands (Social Security office and Bed Bath and Beyond) and continued cleaning and organizing.  We (mainly I) pooped out.

I also went for my first run this morning after being gone.  Just 3.5 miles, and it was rough.  I pushed through, but it was rough.  I’m praying tomorrow isn’t worse.

I have lots of posts to do in the next few days.  My habit has dwindled because we were gone, but I’m hoping to get back to it very soon.  The cleaning and organizing has definitely been eating up my time!  But, I NEED to get things straightened up.  Living in a mess causes way too much stress.


I had my usual cottage cheese and strawberries breakfast this morning.  It was fun because I used one of our new cereal bowls and our new silverware.

For dinner we kept it simple and heated up some refried beans and tortillas and made burritos.  We paired it with a salad (I SO missed homemade salad) and half a sliced avocado.  Greek yogurt in place of sour cream, a little hot sauce, and salsa made it extra yummy.

For dessert we shared a leftover piece of wedding cake from the freezer.  There’s still 2 big pieces left!

Oh.  You know how I mentioned the Social Security office?  Yep, that’s right, I got to start changing my name already!  Our marriage license came yesterday so now I can get all that taken care of.  In other good news, we’re going to Disneyland on Monday and have booked a Vegas getaway for next month.  Making up for the terrible honeymoon!  (That I still owe a massive post on).

Now that I have a second wind after being completely exhausted, I need to get ready for bed.  Gotta overcome the rest of the jet lag!

Spicy Quinoa Stir Fry

Tonight’s dinner was fun.  I was on my own and had two options: heat up the leftover spaghetti from last night, or make something new.  If I didn’t make something new tonight I would have to do it tomorrow anyway because I’ll be on my own again.  (Mat has more night shifts right now because he’s training on some new stuff.  I decided to make something new and then have leftovers available tomorrow and Wednesday.

We had made a bunch of quinoa a few days ago and I figured it would be perfect for a stir fry.  We keep a good supply of canned beans, corn, and tomatoes in the cupboard too, so after chopping some onion and bell peppers all I had to do was open some cans.

There was one thing that made my dinner go later:  I cut my hand on the sharp edge of the open can.  😦

I called my mom to make sure I didn’t need a tetanus shot for it.  I realized right as she said it that, duh, of course I don’t because it’s not rusty.  But I’d rather be safe than sorry!  I held pressure on it for a while and then put a band-aid and I was good to go.

Now on to the food!

I sautéed the onions in some olive oil first.  I would have used some chopped garlic too but we were out.

Next the bell peppers went in and then a can of diced tomatoes with the liquid.  As that heated, I sprinkled in some granulated garlic (since I didn’t use chopped garlic earlier), red pepper, chili powder, salt, and pepper.  I let that heat for a bit.

Next went in a mixture of pinto beans, black beans, kidney beans, and corn.  I added a little more seasoning after tasting.  Neither Mat nor I measure seasoning when we cook, especially when we make it up as we go along like I did tonight.

The last thing I added was the quinoa.  I let the whole mixture heat through and added a bit more salt and pepper.  Mat likes things spicy, so I was pretty generous with the red pepper and chili powder.

As usual, I made a salad to go on the side.  I topped mine with sour cream, but I actually think it would be good, perhaps better, on it’s own.  The quinoa has a much more distinct flavor than rice and is good on its own with all the spices and bean/corn flavors.  All in all though, it was quite good.  I’m sure Mat will agree.  🙂

For dessert, I had a bowl of strawberries and a leftover cookie from my bridal shower on Saturday.

Now, it’s getting to be close to bedtime.  After not sleeping so well last night I need to try and get a good night’s sleep tonight.  It will be hard, as usual, with Mat working late, but it’s pretty crucial I just suck it up and deal with it tonight.

To recap the recipe ingredients, just in case:

  • olive oil
  • handful chopped onions
  • 2-3 cloves garlic, chopped (I didn’t use this but would prefer it to granulated)
  • chopped bell peppers
  • 1 can diced tomatoes
  • 1 can pinto beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • cooked quinoa
  • granulated garlic (if you didn’t use chopped)
  • chili powder
  • red pepper
  • salt and pepper

Countdown: 22 days of school and 46 days until our wedding
