CrossFit!

Mat and I went to CrossFit tonight.  We bought two Amazon/LivingSocial deals a couple months ago that got us a month of CrossFit for $30.  Normally, as many people know, a month of CrossFit is NOT only $30.  Will we continue after our month is up?  Not sure.  It’s really expensive and there are a lot of other things we want to be doing right now (like buying a house and going on trips).  But, we’ll see.  A month isn’t a super long time, but it should be enough for us to figure out what we want to do.

Technically we were taking an intro class, but we basically ended up getting thrown into the workout.  During the stretches beforehand I definitely turned the heads of the instructor and the other people in the class.  When we introduced ourselves I said I ran a lot, but I did not say I was a ballet dancer too.  Then we got to the stretching.  Being a ballerina means that any stretching you do in a gym or class at a gym is easy.  No, seriously.  It was easy.  I got my forehead to my knee and they all were gaping.  I was thinking, “What? This is nothing!”  Hehe  🙂

Our instructor showed us a few basic skills and then it was time for the WOD:

Run 1 mile

40 pull ups

This is where I thanked God that I’m a runner.  Even though I ran 5 miles this morning, I knew I could handle the 1 mile runs.  The 40 pull ups were scaring the you know what out of me at first (I don’t think I can even do one right now) but there was a lovely modified version for people like me called ring rows.

I did my mile, did 40 ring rows, and did my last mile.  I was afraid the last mile would be really hard, but it was actually almost easier than the first one.  On the ring rows, I did 20 straight and rested, then 10 more and rested, then the last 10.  I probably could have done the last 20 all at once, but I didn’t want to overdo it on my first day and I also didn’t want to hog them from other girls who were waiting.

It actually wasn’t too bad of a workout, since 2/3 of it was running.  My arms and shoulders might be a bit sore tomorrow, but that’s ok.  It hurt so good!  I finished in 17:54.

We’re going back for more on Wednesday!

Dinner

Dinner was leftover avocado mac and cheese and salad.  We also had a protein shake since the pasta didn’t have much in the way of good protein.

 

 

It definitely hit the spot.

In other news, I’m currently attending Online Blog Con.  Sorry, no link – the whole blog is private except for those of us who know the password.  🙂  I learned SO much today about blog design and how to gain readers and all sorts of other things.  I took some notes as I read but still need to go back back and REALLY look at all of it.  I hope I have access to all of it this weekend so I can sit down and do that!

And now it’s time to watch the second to last episode of Battlestar Galactica!

I’m such a nerd.  Gotta love it though!

Loving the Leftovers

Tonight’s dinner was leftover Boca Burger enchiladas.  It’s really nice when the recipes that take a little longer last for 3 nights.  Most things last 2 nights, but 3 is extra good.  We took a break from them last night with paninis which enabled us to save the enchiladas for tonight (when I get home the latest out of any weekday) and tomorrow night (I go to ballet and we need something easy).

As usual (we’re rather boring around here sometimes) we had salad on the side:

I also just have to share how much I’m LOVING blogging.  I love seeing my blog pop up in other places like Inside the Fridge and Get Me Through the Week.  I’m even thinking about going to the BlogHer conference next year.  I’d also love to go to Healthy Living Summit, but it’s usually the weekend right as school is starting so unless it’s on the west coast, it’s pretty hard to get to.

Paninis Again!

Tonight we made paninis, but we left out the heirloom tomatoes because we didn’t have any.  We’ve both come to LOVE paninis on the tuscan bread from Trader Joes.  We also love paninis with avocado in them.  DELISH!

We paired them with a salad, of course.

 

Mat had two

Usually we don’t eat in front of the tv but instead play music, sit at the table, and just enjoy dinner.  Tonight though, because we ate later than usual, we decided to just pretend it was Friday (that’s the day reserved for more casual eating) and eat in front of the tube.  We have a free Netflix trial right now so we’re using it to finish watching Battlestar Galactica.

Yes, I know what you’re thinking.  Battlestar Galactica???

I was reluctant at first because it’s a sci-fi show and I’m generally not into that very much.  But, once I gave in to Mat and we started watching it, I got really into it.  It’s a really well-done show and keeps you on the edge of your seat.

And their use of the word “frack” in place of another word that starts with “f” is hilarious.  I’ve caught myself using it a few times.  🙂

Salads for Dinner

Anyone who knows me knows I’m obsessed with salad.  Before I started running, I ate a LOT of it.  Like, tons.  At restaurants that’s pretty much all I would order.

Then, after I started running real distances, I found myself craving real food.  Food like peanut butter and almond butter and CARBS and food with OOMPH.  You know?

But I still like my salad.

 

The salad on the right is a basic romaine/spinach combo like we make every night.  Tonight I decided to go with the slightly unhealthier barbecue ranch.  There were lots of veggies and then I added shredded cheese, crushed tortilla chips, and ranch and barbecue sauce.  It was heavier on the ranch tonight than usual, but that was because there wasn’t much barbecue sauce left.

The salad on the left, though, is a different story.  I prepped it earlier today and let it sit in the fridge so the flavors would come together.  It’s Mango Avocado Black Bean Quinoa Salad.  I used regular quinoa rather than the red from the picture in the recipe.

We’ve made this recipe once before, and it’s delicious.  Very fresh and citrusy.  I’m trying to enjoy these kinds of flavors while it’s still summery enough to make them.  However, I’m not gonna lie.  I’m looking forward to make chili in the crock pot and mac and cheese and other delicious comfort foods.

While I was eating I was half watching Breaking Amish on TLC (Mat is at work until 10:30 tonight 😦 ).  I didn’t see all of it and was doing two things at once, but what I did see was fascinating.  Hopefully I can see an entire episode next time it’s on!

And with that, I will be heading to bed soon.  I think I’ve finally learned my lesson about not getting enough sleep on Sunday nights.  I’m so glad tonight is the last Sunday night Mat will work a late shift – starting next Sunday he’ll be home at this time!

I might eat chocolate first though.  It’s sort of a requirement.

Mmm Paninis!

In dance production today we ran the mile.  I ran with the girls and finished in 8:33.  I never knew what my 1 mile time was until today.  I was hoping it was closer to 8 or even under 8, but I really wasn’t pushing it today because it was afternoon and pretty hot/muggy.  I also have never run the track with a bunch of other kids around so I guess I was a little cautious.  Still though, 8:33 wasn’t bad at all.

My afternoon snack was simple: Greek yogurt with cereal and honey:

I got the dance shoes ordered today and hope the order the bags soon too.  Hopefully the reimbursement goes through quickly.  I’d really rather not be out $400 for several months.

Dinner

Dinner was paninis.  Tuscan bread with pesto, mozzarella cheese, avocado, spinach, and heirloom tomatoes.  Paired with salad.

There was half an avocado left, so naturally we ate it on the side.

He ate two.  Except I sort of had the last few bites of his second one.  Shhhh….

Seriously delicious.  The only downside to paninis is that you always think they’re going to be fast but they’re not.  Hence it is 9:45 and I’m finally writing this post.  Oh well.  They were worth it.  Sooo good!

Tomorrow is Friday and then a 3 day weekend!  Almost made it through the first full (tiring) week of school!

The Last of the Name Changes (Pretty Much)

Today we went to AAA and I got all name changes related to my car finished.  This in included changing the name on the title (and adding Mat to it), changing the name on the registration (and adding Mat to it), and paying the registration.  I also got my name changed on my AAA membership and we got a combined membership.  All that’s left to do car-wise now is wait for all the stuff to come in the mail and then once Mat’s car is paid off later this year and then get the names corrected on that registration.

I started following Attune on Twitter and Facebook today and was offered a chance to sample some of their cereals.  I’m planning to post about how I like them, so make sure to keep reading!

We hit the jacuzzzi for a bit this afternoon/evening.  Second time in a week!  Go us!

Dinner

Dinner tonight was leftover quinoa salad from a few nights ago.  I was also craving a green salad, so I made a decent-sized (read: large) barbecue ranch one with romaine, broccoli, carrots, cauliflower, cucumber, bell peppers, tomato, and red onion.  I tossed it with some shredded cheese and that oh so wonderful ranch dressing/Trader Joe’s barbecue sauce combo.

In defense of my enormous appetite, I didn’t finish either salad.

But we also had honeydew!

i. love. honeydew. the end.

Clearly I had to not quite finish that ginormous plate of salads in order to eat honeydew.  Clearly.

I didn’t eat the whole bowl though.  That’s too much even for me.

The Olympics are awesome.  I’m going to be so sad when they’re over.  It’s just another reminder that summer is ending.  😦

But…Bunheads is on tonight!  Have I ever mentioned how much I love that show?  No?  Darn…

Ballet Night

Tonight was ballet night.  It’s the second class I’ve taken since we got back, and I’m happy to say it was much better than last week’s.  I felt stronger tonight (despite my runs being less than stellar lately) and more flexible.  I’ve been trying to remember to stretch and work on my extension the last few days…hopefully I’ll see it pay off soon.  Hopefully I can throw on the pointe shoes some soon too.  🙂

Mat made dinner tonight while I was gone.  We went for a Pinterest find that we’ve made twice before – once around Easter weekend and again when we went a barbecue at his sister’s house.  It’s a yummy, light, and filling summer recipe.

Lemon Quinoa Cilantro Chickpea Salad (adapted from here)

Ingredients for Salad:

2 cups cooked quinoa, cooled

2 cans garbanzo beans (drained and rinsed)

1 package cherry tomatoes cut in half (we used Trader Joe’s)

4 avocados diced

2 cups spinach

1 bunch cilantro

1/2 cup onion

4 small cloves garlic

Ingredients for Dressing:

juice of 4 lemons

zest of 2 lemons

4 tsp. dijon mustard

4 tsp. olive oil

2 tsp. agave nectar or honey

1 tsp. cumin

dash of salt and pepper

Directions:

  1. Chop spinach and cilantro by hand or using a food processor until finely chopped.
  2. Add the greens to a bowl, and set aside. Finely dice onion and garlic and add to the greens mixture.  Add chickpeas and stir until everything is combined and coated. If the quinoa is cooled, you can add it to the chickpea mixture next.
  3. Make your dressing by whisking all the ingredients together. Pour over salad, and mix until combined. Add in tomatoes and avocado and mix. Set in fridge for about 10-15 minutes before serving so the flavors set.

 

It was yummy, as always.  We also finished off the melon from the other day, but I ate that too fast to take a picture.

I’m on my own (sort of) tonight because Mat has to work super early yet again tomorrow.  It’s not the most fun thing to have him go to bed before me and to have him be asleep when I go in later, but with so many early shifts in a row he just can’t afford to lose sleep even for one night.  Hopefully his schedule calms down a bit to only 1 or 2 early shifts a week instead of 4.
