Salsa Chicken

Today’s Run

5 miles, 50:50, 9:33 pace


A few weeks ago, I saw a recipe for salsa chicken on several blogs including Meals and Miles and Peanut Butter Fingers.  Naturally, I had to try it.

It’s really easy.  Step 1: Put chicken breasts in crock pot.  Step 2: Cover with salsa.  Step 3: Turn on crock pot and leave for work.

Except I didn’t do it before work.  Mat did it because he’s still off work from his hurt wrist.

We made the chicken into tacos.  I topped mine with some chopped tomato, plain Greek yogurt, and shredded cheese.  Refried beans and roasted Brussels sprouts finished it off.

This weekend will be my last really long run in LA Marathon training.  It will be 22 miles at the beach with my Daddy.  I can’t wait to get it done!  I need a serious break after this, both physically and mentally.


What do you do when you’re burned out from a certain type of exercise?  Do you take a break or just keep going?

I tend to just keep going.  Right now I basically have to keep going because I’m training.

Two Dinners, Etc.

Last Night

Mat made blackened mahi mahi with a mango salsa.  It.  Was.  Amazing.  You can find the recipe on Hookin and Cookin

It was served on a bed of greens.  It was a super light dinner, and next time we have it (we have more mahi mahi in the freezer and plenty of salsa!) we’re going to add some cilantro lime rice to the plate.  Yum!


Tonight’s dinner was courtesy of El Torito Grill and my amazing in-laws.  They asked us if we wanted to go to dinner tonight, and since we had no other plans besides hanging around, playing Halo (Mat) and doing bridal/baby shower crafty things (me) we said sure.  They paid, even though we tried to pay for our own.  We have awesome parents.  🙂

I had the chicken tostada salad which I’ve had several times before but not recently.  It’s a huge tostada shell filled wtih salad fixings and chopped bbq chicken that’s cooked superbly.  I highly recommend it.

Other Stuff

I didn’t blog yesterday because I was caught up in things.  We went to church, went to Starbucks with my parents and grandmother, ran a bunch of errands, and then were browsing houses all day (more on that in a minute).  I also managed to get my self-hosting set up and am in the process of transferring my domain and content over to my new host!  Exciting stuff!

And, my blog design is beginning!  I was contacted by the designer today and should have a first draft in a few days.  Yay!

I have jury duty for the next TWO weeks.  Thank you federal court.  However, when I called in tonight I was told that I do not have to report tomorrow and do not have to call again until next Monday.  I don’t get it, but I’m not complaining!


We looked online at a bunch of houses yesterday.  Since we’re not finding anything in our current area, we decided to expand our search.  Upon doing so, we found other areas in which we could get a LOT more house for our money.  We’re talking anywhere from 3000-4000 square feet, 4-6 bedrooms, and 3+ bathrooms.  And a yard.  That size of house here in the OC would run you nearly 1 million.  Our price range in the OC would get you a 1500 square foot condo.

So that’s where we’re at.  I’ll share more when the time is right.

Out for Valentine’s at Seasons 52

Back at Christmas, my parents gave us a gift card for Seasons 52.  It’s a unique restaurant at South Coast Plaza that serves a lot of organic dishes.  The menu changes with the seasons, and the specials change every week (hence the 52 in the name).  We’ve been once before, almost 2 years ago, but because it’s not cheap it’s not a place we regularly visit.  So, when we got the gift card we decided to save it for something special.

Your first married Valentine’s is special, right?  Right.

I was also very excited to wear my new earrings (that you can’t see in this picture) and use my new purse!

We each had a glass of wine.  I chose a pinot gris that was light and refreshing.



We shared a garlic chicken flatbread and an organic baby spinach salad to start.  The salad had pears, pine nuts, and gorgonzola cheese and was delicious.














They split the salad for us which was nice.



For my entree, I ordered the jumbo shrimp with penne pasta.  It wasn’t a very big portion, (another nice thing about this restaurant) so I ate every last bite.



All of the entrees are under 475 calories.  That’s unheard of!  Granted, when you add in wine, flatbread, salad, and dessert, the calorie count goes up quite a bit.  But hey, if the entree is that low I’m a happy camper!

Speaking of desserts, Seasons 52 is awesome in that they offer a variety of miniature desserts.  They bring a tray with every selection to your table and let you pick whatever ones you want.  We had 4 of them: mocha, chocolate peanut butter, rocky road, and pecan pie.

I cannot tell a lie…I ate most of them.  But I ran 14 miles today despite being super tired and run down so it’s ok.

Finally having a date night was AMAZING.  Being married is lovely, but finding yourself just going through the motions, doing the dishes, trying to keep the house clean, dealing with the stress of buying a house, etc etc etc is not so lovely.  Having date nights is so important.  My new goal is to make them a regular thing, even if it’s just a simple inexpensive dinner.

Some Days Just Aren’t Running Days

I don’t get it.  Last week I ran 21 miles with out music and felt pretty darn good.  Then this morning I ran only 14 miles and felt like crap.

I woke up just not in the mood AT ALL.  I generally have to force myself out these days, but today I was just not feeling it at all, physically or mentally.  I took forever getting out the door and was immediately greeted with unseasonably warm temperatures.  Don’t get me wrong, I love warm weather and it’s one of the many reasons we’re trying to buy a house in one of the most expensive areas of the country.  But when it comes out of the blue it’s not fun.



This is of course later than when I ran, but it still shows how much warmer it suddenly became (and how cold it’s expected to get in comparison).  I ended up ditching my jacket a mile and a half into the run.  Since the first few miles took me in a small loop around home, I was able to have Mat come out and take the jacket from me so I didn’t have to deal with it around my waist the whole time.

The whole run was rather ugh.  I had to walk quite a bit and even stop to catch my breath and rest.  I mean seriously, these splits are pathetic.


I guess not every run can be a good one, right?  Just gotta shake it off and remember that I have one more really long one next Saturday and then it’s already taper time!

Another way to shake it off is to be excited about our Valentine’s date night tonight!  With the new Kate Spade purse and earrings!

My First Income as a Blogger!

Yesterday I received an email.  This is what it said:

Yep, that’s right!  I made my first $50 as a blogger!

I’ve joined several social media influencer programs through BlogHer and a few months ago was offered an opportunity to post ads for a beauty company on Facebook, either my personal page or my blog page.  I did a combination of both, submitted the links as proof, and lo and behold received my payment yesterday.  It’s not much, but it’s a start.  I can’t wait to see what the next few months bring!

Our First Married Valentine’s Day

Today’s Run

This run was tough.  Most Thursday runs are.  By Thursday my legs are feeling the pain and need a rest.  Fridays are quite a welcome thing now, more so than usual.  Thankfully by Saturday I’m usually decent enough to do a long run, even though I might dread it.

Valentine’s Day

We decided to keep it low key for Valentine’s this year.  We kept a rough $25 limit on gifts for each other and enjoyed dinner at home while watching The Vow.  I’d never seen it and really enjoyed it.  I’ll try to get a review up soon.

My gift from Mat was these Kate Spade earrings.  Did you know I’m a bit obsessed with Kate Spade lately?  Ok, maybe more than a bit.


I got him The Dark Knight Rises on blu-ray.  He was pretty excited.  🙂

For dinner, we had the last of the crock pot lasagna soup with garlic toast.  For our vegetable tonight, we sauteed some yellow squash and zucchini and it was delicious.  In fact, it was rather sensational.  Here’s how we did it!

Sensational Sautéed Squash with Caramelized Onions


1 tbsp coconut oil

1/4 red onion, thinly sliced

6 yellow squash/zucchini (we did about 3 of each) cut into rounds

smoked paprika

red pepper flakes

garlic powder

salt and pepper


1. Melt coconut oil in large skillet.  Sauté onions until cooked through.

2. Add squash/zucchini to skillet.  Let cook for a few minutes and then add all seasonings according to taste preferences.  Cook until squash pieces are soft but not mushy.

The red pepper flakes, smoked paprika, and garlic powder give the squash a nice kick without being overly spicy.  Definitely a make-again recipe!
