While I was at Kelly’s bachelorette today, Mat made sweet potato protein pancakes. However, all he told me was that there was a surprise waiting for me in the fridge. I love my husband. 🙂
Since I didn’t eat much at the brunch, I definitely needed a pick me up. I ate three of the four pancakes he left for me with peanut butter and pumpkin smeared on top and sliced the nectarine I had brought home from San Diego (Vanessa is so awesome – she went to the grocery store and bought a bunch of snacks).

Sweet Potato Protein Pancakes
1 large or 2 medium sweet potatoes, microwaved for 5 minutes and cooled)
2 scoops protein powder (ours is chocolate)
2 tsp baking powder
1-2 tsp sugar or stevia
1 cup egg whites
2 tbsp flaxseed meal
1-2 tbsp vanilla extract
Mix all ingredients together. Cook pancakes on griddle until done, like you would any other pancake.
