Boca Burger Enchiladas

Tonight Mat invented Boca burger enchiladas.  They were supposed to be for a recipe link up with DailyBuzz Food, but apparently we missed the deadline.  We made them anyway though so I can post them up here!

Boca Burger Enchiladas

Sauce Ingredients:

2 tbsp. olive oil

1 tsp cumin, ground

2-3 tsp chili powder

1/2 -1 tsp cayenne pepper

1 tsp smoked paprika

¼ cup flour

¼ cup tomato paste

14.5 oz. vegetable broth

Salt and pepper

Enchilada Ingredients:

3 cups (12 oz.) pepper-jack cheese, grated

15 oz. can black beans, rinsed and drained

1 carton (10 oz.) frozen, chopped spinach, thawed and squeezed

15 oz. can corn kernels, drained

2 boca burgers cooked and cut into cubes

1 tsp cumin, ground

1 tsp chili powder

16 tortillas (6” size)


1. Preheat oven to 400 degrees F.

2. In a medium saucepan, heat olive oil and add spices, flour, and tomato paste.  Cook 1 minute, whisking.

3. Whisk in broth and ¾ cup water.  Bring to boil and then simmer until slightly thickened (5-8 min.).  Season with salt and pepper and set aside.

4. In a large bowl, combine 2 cups grated cheese, beans, thawed spinach, boca burgers, corn, cumin, chili powder, plus salt and pepper.

5. One-by-one, fill tortillas with about 1/3 cup filling, roll tightly, and arrange in baking dish, seam down.

6. Cover enchiladas with the sauce and bake 15 minutes or until sauce is bubbly.

7. Add remaining cheese and cook for an additional 5 minutes.

8. Remove from oven, let cool for 5 minutes and serve.
