Tonight we made this recipe.  We altered it to have no mushrooms or olives (eww) and added a can of corn.  We also doubled the entire thing (the full can of corn was for the doubled version).  It was delicious!  Nice and smoky with a spicy kick too.  We were thinking it would be excellent with shrimp added to it.  As soon as Mat suggested it I think my eyes went wide and I said, “Yes, we must do that.”


We paired it with a salad (of course) and the last of the honeydew from Saturday night.  And, we have tons of leftovers for tomorrow!

I was proud of myself for getting some more choreography figured out for tomorrow’s practice.  I’m tired, but excited to almost finish the dance tomorrow.  Hopefully it gets totally finished on Wednesday!
