Veggie Spaghetti (Hey, That Rhymes!)

Since Mat worked from 12-8 today and I’ve been pretty lazy all day, I decided to do an easy dinner.  Enter spaghetti.  I threw a salad together ahead of time while making my lunch for tomorrow so I wouldn’t have to do everything at the same time.

As I was making the salad and my lunch, I noticed the bag of frozen stir-fry veggies in the freezer that we haven’t used in a while.  I thought that could be a good addition to the spaghetti sauce, just to make it more interesting.  Yeah, the veggies are more “Asian” and spaghetti is more “Italian,” but who cares?

I started by heating some olive oil in the skillet.  I threw in the veggies and sprinkled some red pepper flakes in to give it some kick.  The sauce I used is the roasted garlic from Trader Joe’s that already has a good garlic flavor, so I didn’t bother adding anymore.  (I’m also lazy today, remember?).  Once the veggies were softened I poured the sauce in and let it heat.  The last thing was three tablespoons of nutritional yeast and letting it heat just a bit more.  I poured it on the pasta and voila!  Spaghetti with nutritional yeast with a twist!

You know how I’ve been chocolate wasted lately?  Well Mat came home from work tonight with blondies from the demo station at work. There were two of them.  What did I do?  I inhaled one without even thinking.

Fortunately I had enough sense to leave the last one for Mat.


And suddenly it’s 9:20 on Sunday night.  Where did the weekend go??

Chocolate Wasted

Chocolate wasted is how I would describe myself lately.  I DON’T KNOW WHAT’S GOING ON.  I keep craving chocolate and just NEED it now.

Stress?  Lack of sleep?  Yes, always.  But the last week has been particularly bad (money issues).  At Misty and P.K.’s wedding yesterday I grabbed a bunch of chocolate from the candy bar.  I ate a bunch yesterday along with chocolate cake.  We came home and had ice cream.

Today I had cereal for lunch (and coffee).

At some point a couple hours later, I munched on a bunch of leftover candy.


And later, when I realized I should probably eat something else that was “real” since dinner wouldn’t be until Mat gets home around 8:30, I had a banana with almond butter and couldn’t resist adding chocolate chips.


What the heck is going on with me?

A few minutes before writing this post, I had a few MORE  m n m’s.  It’s like I can’t stop until I just finish the dang things.  Which, sadly, is very likely to happen.

Do you ever have days where you have ridiculous cravings?  (Please say yes…tell me I’m not alone!)

Misty and P.K.’s Wedding

Remember yesterday when I talked about how excited I was to go to a wedding?  Weddings never disappoint.  This one was in Cardiff-by-the-Sea, right near Encinitas (northern San Diego).  It was only about an hour from home.  Misty and P.K. had their wedding by the pool/clubhouse in their housing community.  They bought a house together in Cardiff and decided to get married at home.

I don’t blame them – check out that view!



Before the wedding started, we made sure to get some pictures of come of the cute decor they had.





Soon it was time for the bride to walk down the aisle!


The ceremony was performed by Misty’s brother, which made it extra special.

Then it was time for cocktail hour over by the koi pond.  I was much more into pictures of people and the event that food last night.  And I’m not gonna lie, some of these pictures were taken by my mom-in-law or others and I stole them from Facebook.  🙂

We eventually headed back to the ceremony area for dinner.  There was a “backyard wedding” feel to it – there were several food stations that had difference kinds of yumminess.  Salad, pasta, and breadsticks, fish tacos, beef or chicken sliders, fries, asparagus…I think that was it.  And of course the candy bar you saw earlier.

I don’t drink beer, but you can still always find a use for a cozy!  (Speaking of beer, there was a LOT at this wedding.  Two kegs were hooked up to a cooler.  It was right by our table – I can’t believe I failed to get a picture of it).

All that alcohol made for some craziness.  The dance floor was one of the most entertaining I’ve ever seen.

We kept waiting for someone to fall in the pool.  While no one fell in per say, the groom did decide to jump in a bit later.  Then the bride and groom jumped in together.  Yes, the bride jumped in the pool in her dress.  That led to this:



People just kept jumping in!  Or being pushed in.  Or falling in.  It was crazy!  We did not partake – not our thing.  Though I’m not gonna lie, if I was a bridesmaid and probably wouldn’t be wearing the dress again anyway, I might have.

Once you have a bunch of guests soaking wet, an event is nearing its end.  We were getting pretty tired at that point anyway (plus we’d had a busy morning!) so we headed out.  The drive home was easy and quick, and when we got home we changed out of our nice clothes and verged on the couch while finishing the homemade cookies and cream ice cream that was still in the freezer.

And then I was falling asleep on the couch.  It was somewhere close to midnight and time for bed.  I then proceeded to sleep until 9:30 this morning.  I’ll probably regret it later when trying to go to bed early for work tomorrow, but for now I don’t care because I clearly needed that much sleep.

The rest of today?  Vegging and blogging on the couch.  The only thing to make today better would be if Mat didn’t have to work.  :-/

I Heart Weddings

Today we are going to Mat’s cousin Misty’s wedding.  I LOVE WEDDINGS!!

But, before we could leave for the wedding, there were chores and things to be done.  Mat took the day off, so we both got to get up at the same time and go for a run.  We always run separately because I can’t handle his long legs and the fact that he’s a guy.  He ran 8 miles since he just ran 13 on Monday, and I ran 10.  It was our last long run before next Sunday’s half marathon!

Before my run, I had a graham cracker with peanut butter on it.

When we got back, Mat went off to get a haircut, deposit reimbursement money from when I bought stuff for dance production, and get gas in his car.  The wedding is about 60 miles away – a quarter tank wasn’t going to cut it.

While he was gone, I got to cleaning.  I straightened up, dusted, vacuumed, and cleaned the kitchen.  I also put out the Halloween decorations we bought on our Target run last night.

Ignore the cheese commercial and focus on the pumpkin candy dish and twig-like pumpkin.  🙂

We got a few Thanksgiving things too.  I was trying to get a combo of stuff – pumpkins work for both Halloween and Thanksgiving, so we got a couple things like that and then a couple Halloween only and a couple Thanksgiving only.  I love being able to decorate!  It’s our first holiday season in our own place, and it’s quite exciting.  🙂

What kinds of holiday decorations do you put in your home?

While I was cleaning, I realized it was going to be a while before I could eat an actual meal, so I snacked on a Babybel lite cheese.

It was finally time, after a shower, to eat.  I had a sliced banana with strawberries, overnight oats, chocolate coconut water, and iced coffee with milk and Hersheys.

In the oats:

  • almond butter
  • 1/2 cup oats
  • pumpkin
  • chocolate chips
  • 2 tbsp flaxseed meal
  • chocolate protein powder mixed with milk
  • granola (added this morning before eating)

After eating, I gave myself a mani/pedi.  Gotta look pretty all over for a wedding!  I bought a new Essie nail polish at Target last night – it’s called “miss fancy pants.”  Cute, right?

I really like the color.  The glitter is an old one I found – I put a coat of it on the ring finger of each hand after the solid color.  I love the ring-finger-other-color-or-glitter trend!

You can’t really see it in this picture, but it’s there.  I was looking for a more sparkly silver glitter polish that I swore I had, but I guess it was always my sister’s that I stole.  Oh well.

Oh, are you wondering where my wedding ring is?  I cleaned it this morning so it’s nice and sparkly, so I’m waiting to put it back on right before we leave.

And that’s been our day so far.  We’re leaving in about an hour, so I better get my hair and makeup done!

Before I race off though, yesterday was a total pumpkin kind of day:

Heck yes pumpkin spice latte and pumpkin scone!  Thank you Starbucks!  And thank you to my husband for getting me a mini pumpkin to make my desk at work more festive.  🙂

Mini Date Night

The other day Mat suggested that we go out tonight.  NOrmally I’m not a fan of going out on Fridays because I’m generally pooped from the work week, but we haven’t had a night out just the two of us in a long time and won’t have an opportunity (on a Saturday anyway) for a long time.  So, we decided to go for it.

We ran to Hallmark and Target first.  I got some fun decorations for Halloween/Fall that I’m really excited to play with and set up on Sunday.  Pictures will wait until then.  🙂

Then it was dinnertime.  We decided to go to Corner Bakery since it’s close, easy, and inexpensive.  Plus, I got an email for a free sweet for my birthday.  Two weeks early?  Fine with me!

Usually I get a salad or a half panini with soup or salad, but today I was in the mood for pasta.  I’ve really been craving comfort foods and sugar lately.  It’s not good, but at the same time when this happens it’s usually fairly short-lived.  I’ve also had some pretty good stress lately, so that could be part of it.

In any case, I decided to try the Mac and Three Cheese.  I had the combo, which meant the pasta was a lot smaller and it came with a salad.  Gotta make it healthy where you can!


The bread wasn’t on the menu, but I was excited about it.  I love bread!

My free sweet was the fudge brownie.  Yum!


And now it’s time for the couch and last night’s episode of Glee.  Going to a wedding tomorrow night!!

Half Marathon Goal

On October 7th, I’m running my 4th half marathon in Long Beach. I’m really hoping to PR. It would be nice to break 2 hours, but I’m not sure if I can based on prior times. Here’s what I’ve done before:

  • October 9, 2011 Long Beach Half: 2:14:48
  • February 5, 2012 Surf City Half: 2:10:01
  • May 6, 2012 OC Half: 2:08:33

I think I can get under 2:05 if I push, but I’ve only been working on fartlek running a tiny bit (so tiny that I haven’t posted on it yet) and I’ve only done 5 1-mile runs with dance production where I pushed myself to lower my time.

What do you think – can I break 2:05? 2:00?

Blogging Opportunities

Have I ever mentioned how much I’m LOVING the blog world? Well, I’m LOVING the blog world. And the best part? I’m also having a lot more fun at work this year than last year. So despite being tired, and despite having a terrible morning, things are good.

One of the opportunities I have coming up is the chance to work with SlimKicker. Slimkicker is a free site that helps people achieve their fitness goals in a fun way by turning fitness goals into a level up game. I’m super excited to work with them! I’m also looking into publishing opportunities with BlogHer as well as moving toward a self-hosted site and redesigning my site. I stumbled on another blogger the other day who also does designing for not a lot of money. I figure it would be a great way to give my blog a fresh new look without spending a fortune. And, I know that hosting isn’t too terribly expensive per month either. I think it would be a great opportunity for my blog and for me since, you know, I’m LOVING the blog world. 🙂

Since I went to ballet tonight, Mat made dinner. Actually, I think he’s made dinner most night’s this week. We kept it simple with salmon patties, salad, and the leftover quinoa from Tuesday’s stir fry.


I realized today that I haven’t posted breakfast, lunch, or snacks in forever. Here’s an update: I always have cottage cheese, granola, and strawberries for breakfast along with coffee. I always have half a pb&j with an apple or banana for lunch.

It’s super exciting.

It’s time for bed. It’s been a long week, and an even longer day. Thank goodness tomorrow is Friday!

P.S. I’ve consumed these today, times several. It was one of those days.
