School may be starting, but summer is not officially over for another month. Therefore, I still eat summer food.
Tonight we made pasta salad. Instead of bow-tie pasta though, we used fusilli. We added a bunch of raw veggies: asparagus, broccoli, carrots, cucumber, and zucchini. The whole thing was tossed with Italian dressing, nutritional yeast, and parmesan cheese and served on a bed of spinach

That lovely little thing is almond champagne. It was given to me today as a wedding gift from one of the counselors at school. He said that it was what he and his wife drank at their wedding. He gave a bottle to everyone who got married recently!
Isn’t that the most awesome thing ever?! I was really touched. And, we definitely enjoyed it tonight! And probably will tomorrow!
Time to get in bed and read. I need an actual night’s sleep tonight…tomorrow is the first day of school!
