Pizza Ratatouille Stir Fry

Tonight’s dinner was super fun.  We had leftover pizza sauce, roasted peppers, and sun-dried tomatoes from Saturday’s pizza night with Mindy and Joel, so Mat came up with this stir fry while I was at ballet.  It was definitely a winner!

It started with garlic and onions:


Then red pepper flakes:




Add roasted and chopped fresh red and yellow peppers:



Add pizza sauce and sun-dried tomatoes…done!



We served it with a salad tossed with a mixture of ranch and Italian:

It was super delicious.  I love inventing new recipes!  Or when Mat invents recipes.  🙂  And so it’s easier, here’s the complete ingredients and instructions:

Pizza Ratatouille Stir Fry


3 cloves garlic

1/4 yellow onion, diced

1/2 jar roasted yellow and red peppers (Trader Joe’s)

1 cup chopped bell peppers

1-2 dashes red pepper flakes

3/4 jar pizza sauce

1/2 package sun-dried tomatoes (Trader Joe’s)

salt and pepper


1-2 cups cooked brown rice

shredded mozzarella cheese


  1. Sweat the onions and garlic in olive oil for 5-7 minutes.  Add red pepper flakes, roasted peppers, and chopped peppers.  Stir to combine and let cook for 10 minutes on low.
  2. Add pizza sauce, oregano, and sun-dried tomatoes to pepper mixture and let cook for 20-30 minutes on low.  Add salt and pepper to taste.
  3. Serve on a bed of rice and top with mozzarella cheese.

  1. Did Mat make it with the help of a little rat in his hat by chance? Because that’d be cool. And then I’d have to invite myself over to watch him cook. Ahhh that’s a great movie. We should watch it!
